I went wheat-free for a month hoping it would help my endometriosis &amp;amp; some stomach problems I seemed to be having when I ate bread &amp;amp; pasta. It didn't help with the endo but I've been back on wheat for two days &amp;amp; I'm freaking exhausted &amp;amp; depressed. It seems so instant so I'm blaming the wheat. I guess I'm going back to being (at least mostly) wheat free.

&lt;br/&gt;I found this great recipe blog through the vegetarian tribe here. It's all meat-free, gluten-free stuff. Even if you eat meat you could probably adapt the recipes. http://glutenfreehippie.blogspot.com/ Some of it doesn't look great but some looks delicious.&lt;/div&gt;

&lt;br/&gt;i have been wheat free for some time now, i lost track in there
&lt;br/&gt;i do slip up a little bit, but that's ok! it's part of living! (until you feel horrible and remember why you have chosen a wheat free life- he he)
&lt;br/&gt;anyhow, i'd like to say that i am partial to pamela's chocolate chip cookies
&lt;br/&gt;and
&lt;br/&gt;also
&lt;br/&gt;a local company- monster muffins and stuff is wheat free and can be found in most health food stores (if you don't mind paying $3+ for a cookie!)
&lt;br/&gt;but as for food (rather than desert) i love making lentils and quinoa with a side chopped salad and scooping all that into lettuce cups or wrapping depending on the lettuce

    <title>WHEAT FREE OATMEAL</title>

    <summary type="html">&lt;div&gt;I don't mean to step on any toes and I mistitled the previous post (which I have deleted). However, I am hoping to continue the oatmeal discussion because of conflicting "expert" advice I have heard.
&lt;br/&gt;
&lt;br/&gt;I have been told that oats were bad because they either are "processed" in facilities that also process WHEAT, and because they themselves are close enough to WHEAT to have adverse affects on people sensitive to wheat. I have also heard that the latter is not true, and oats are only "bad" because of the former.
&lt;br/&gt;
&lt;br/&gt;Some responses from the previous post indicated that oats aren't a bad thing? So it is possible that info on oats being similar enough to wheat to cause problems is untrue? I guess this could all depend on your level of sensitivity to wheat.

    <title>Okay, I'm back on board!</title>

    <summary type="html">&lt;div&gt;After a 5 month slump into the netherworld of yeast, bloating, mood swings, weight gain, and general malaise, I am tossing my bread and honoring my body again.
&lt;br/&gt;
&lt;br/&gt;It crept up so slowly that I hardly noticed it happening until the yeastie beasties were out of control, and I was so very disconnected from my body.
&lt;br/&gt;
&lt;br/&gt;So earlier this week I wrote a list of all the foods I was surrendering to my gluten eating roommates, and today, I went food shopping and purchased nearly all fresh fruits and veggies (some tofu in the mix).  I've eaten very clean the last 2 days and attended a superfab yoga workshop today (thank you, Faern!), and already I feel my emotional, mental, spiritual, and physical bodies realigning and supporting each other!
&lt;br/&gt;
&lt;br/&gt;So yeah, as Faern mentions in the other thread, sometimes it's good to have these slip-ups cause the yuckiness reminds you why you stopped eating this stuff in the first place.  But 5 months is too long.  It's good to be back to me.  :)&lt;/div&gt;

&lt;br/&gt;intro+questions follow;
&lt;br/&gt;
&lt;br/&gt;i had some kidney issues as well as allergies and general un-well-being, and these are the diet mod's i've done to achieve better health for myself. i try to stay away from most grains, occasional rice and quinoa are all i've been eating in that department. also, because of having multiple kidney stones at a young age and other kidney related problems (paiiinnfulll) i've cut out (some things i love) most nuts, spinach, tomatoes, mushrooms, strawberries. i don't any animal products, besides occasional fish and eggs. i'm meant to have a low protein diet, so its not a big issue there. 
&lt;br/&gt;
&lt;br/&gt;so, a normal american diet is out of the question now!
&lt;br/&gt;
&lt;br/&gt;i'm not about to give it up. i feel amazing. my entire life i'd had shortness of breath from asthma, and i am breathing far deeper than i ever knew was possible. my body looks and feels better than ever before. 
&lt;br/&gt;
&lt;br/&gt;anyway... i do feel a bit limited. after a month, i've eaten a huge variety of vegetables, some thai food and indian foo, sushi. what i'm really missing is desserts...
&lt;br/&gt;
&lt;br/&gt;i'm wondering about wheat-free, dairy-free, sugar-free dessert items and also wondering if any other people here follow diets similar to mine. also wondering if you all know of tribes with these restrictions. its hard to find recipes and things that make all these considerations.

&lt;br/&gt;Mental note - Buckwheat is just like wheat. Apparently, I hadn't actually craved or eaten buckwheat aka kasha since I've gone wheat free and well... yeah. Sad. I was so excited to have a big plate of the stuff and a proper bowl of borscht. It was as good as chocolate cake once I realized that it was something that I won't be eating again.

&lt;br/&gt;
&lt;br/&gt;3 eggs, mixed
&lt;br/&gt;1 ripe banana mashed
&lt;br/&gt;1/2 cup walnuts, grind until fine
&lt;br/&gt;
&lt;br/&gt;Mix together and make like normal pancakes. You may find you need to add less or more walnuts. Sometimes the pancakes don't turn out and I find I needed to add more.

Do any of these sound familiar? muscle cramps, gas, bad breath, unexplained depression, cry itchy skin, bloating, difficulty concentrating, sinus issues, back pain. blah blah blah. I was wheat free for a few weeks and felt better. went off it and the more I eat the more I wander around the house looking for salty vinegary things to chew on. I'm more restless and since when do you need to stretch before getting off the couch so you don't pull a muscle? I work out every week and I belly dance so I can't be in this bad of shape&lt;/div&gt;

    <summary type="html">&lt;div&gt;How does this happen???  I've no idea.  I tested it in small bits at first: a pretzel here, some soy sauce there.  And that went okay.  So I had a few more pretzels another day.  And that went fine.  And then: I ate a half a bagel!  And that went okay.  So then: I ate the other half!
&lt;br/&gt;
&lt;br/&gt;There were other events like this, bigger and more daring in wheatscope, but there remained a question in my mind...until today.  I got allergy tested, and I am completely free of food allergies!  Wow!  Not entirely allergy free just yet: I'm allergic to dust mites, dogs, and cats, but as long as no one makes me a dust mite sandwich, I should be fine!

    <summary type="html">&lt;div&gt;I am fighting a desperate battle with Candida albicans and I am working hard at staying wheat and gluten free. I would highly welcome the names of any stores in the Washington Heights area with wheat/gluten-free foods as well as restaurants and recipes. I am currently taking Candistroy (on my third bottle) and have also tried Three Lac.  I realize that I can't make serious progress until I develop a serious diet regimen to support this effort.     <summary type="html">&lt;div&gt;A couple weeks ago, I realized I was about to make a major cheat at dinner and was out of allergy pills (which help me a lot with the histamine reactions, but not the digestive ones).  So on my way there, I stopped at the local integrative pharmacy where I was told they don't carry my allergy pills but would be happy to order them.  No good, as I was about to go out to dinner.  The ND on duty asked what I was allergic to, and when I told her it was wheat, she said maybe she could help.  She led me to this stuff: http://www.enzymedica.com/products/GlutenEase  It was a tad over $30 for a bottle of 60 pills, and she said I could bring it back if it didn't work.  She also said while they've had great feedback on the brand, they've had none on this particular product.  Ok, sure, one pill can't kill me.  I'll be the guinea pig.  So off I went to dinner.  
&lt;br/&gt;
&lt;br/&gt;I popped a pill with my first bite of my seitan sandwich (I told you there was going to be major cheating) and hoped for the best.  It wasn't a cure-all, but it really did help!  Cut way down on my digestive symptoms, but somewhat less on the histamine/head cold reaction I usually get.  
&lt;br/&gt;
&lt;br/&gt;Then I was sent to a conference for work.  In New Orleans.  Do you know how hard it is to be vegan in New Orleans?  Toss in wheat-free, and you're screwed.  I took a handful of these little magic pills with me.  And you know what?  While my body definitely made me aware that something was amiss, I didn't get sick.  
&lt;br/&gt;
&lt;br/&gt;So, I wouldn't call these a cure-all.  I wouldn't start eating wheat at every meal.  But damn, they're nice to have around for special occasions and travel and whatnot.  &lt;/div&gt;

&lt;br/&gt;
&lt;br/&gt;I'm jenn. I am on a new adventure in eating and am excited that y'all are here. I am doing some harm-reduction lifestyle changes (a little at a time) and think it might be time to lower and eventually phase out the wheat in my world for some rather persnickety health reasons. I have been quite lucky to find the wheat-free/gluten-free tribes. I have some other introductory posts up and around these here parts (but wanted them all to be different, so no cut and paste) and would love to ask here as well.
&lt;br/&gt;
&lt;br/&gt;I have three beautiful overripe bananas teasing me from the kitchen and I really want to make banana bread. I am not able to go to the store (fatigue problem at the moment) and have a few flours on hand. I do not have celiacs, so gluten is still OK (though i'm looking to phase that as well...but all in due time). I have oat, brown rice and spelt fours as well as some almonds around I can grind up. The challenge? Any recipes or ideas out there using the flours i've got? I could experiment, but would hate for a kitchen disaster today. If there are vegan recipes out there too, I'd love to hear your wonderful creations!

&lt;br/&gt;and they have this peach tree that is overwhelming
&lt;br/&gt;so, i am going to make up a wheat free peach crisp, with the ingredients i can find already here
&lt;br/&gt;cause, i am bound to the home
&lt;br/&gt;so, i will be using regular old sugar &amp;amp; brown sugar, probably some apple juice, lemon juice, cinnamon and oats-
&lt;br/&gt;i don't have any actual flour to work with, but i found this recipe to alter that only calls for a tablespoon of flour- so i was thinking of mashing up some whole oats- or, now this is *a little weird*- one recipe i was looking at called for some rice flour- so i was thinking about mashing up some rice cakes - but i think the oats make more  sense...

    <title>problems with rice?</title>

    <summary type="html">&lt;div&gt;So I am new to all of this wheat free stuff. I bought some wheat free/gluten free cookies a couple of weeks ago and actually enjoyed them. But I did notice not feeling well after I ate a couple. I didn't pay it much attention as it could have been anything (being tired, work stress, etc.)
&lt;br/&gt;
&lt;br/&gt;Today I had a couple of slices of wf/gf brown rice bread for breakfast and then at lunch i had an gf/wf Amy's rice bowl and another one of those cookies. Almost immediately I got a bad headache and then my stomach started hurting.
&lt;br/&gt;
&lt;br/&gt;Here it is hours later and I am still feeling sick and running to the bathroom.
&lt;br/&gt;
&lt;br/&gt;Could I be having a problem with rice too? I can't think of anything else in the things I ate that would give me these problems.

    <title>Hi all! Yup, it's another newbie</title>

    <summary type="html">&lt;div&gt;Short intro: I've been wheat-free since January and feel fan-freakin'-tastic! I've been looking for a place where not everyone is a celiac and avoiding all gluten... no offense to any celiacs here, it's just that if you even say spelt to a celiac they turn and run away.:) I'm also lactose intolerant (big surprise!) I have never been to a doctor about this wheat thing, but I did a ton of research, spoke to a nutrition expert and went on an elimination diet before jumping ahead. 
&lt;br/&gt;
&lt;br/&gt;I can have oats, barley, rye and spelt with no problem. 
&lt;br/&gt;
&lt;br/&gt;I've "wheated" myself since starting, mostly in the beginning by accident.... sometimes on purpose (only 3 times!) and totally willing to pay the consequences (fried dough!!, Pizza Hut, take-out Chinese chicken fingers)  
&lt;br/&gt;
&lt;br/&gt;I have found that Yogi Detox Tea helps with alot of my symptoms if I accidentally ingest wheat. Symptoms: Extreme fatigue, neck &amp;amp; shoulder pain, brain fog, burping, gas, bloating, stomach pain, nausea, fever, post nasal drip, moodiness, shortness of breath, "it's like the flu" I tell people. Or a hangover. Anyone else feel like someone slipped them some opiates after they eat wheat? Only it's not good. Weird I know. 
&lt;br/&gt;
&lt;br/&gt;I was reading through some posts here and often chuckled, "you're safe, there's only flour in that, not wheat" Man! have I heard that a thousand times! Ever meet the people who think eggs are dairy? Or that you can eat white bread.... 
&lt;br/&gt;
&lt;br/&gt;And yes, I miss bagels. Glutino makes a nice bagel though. &lt;/div&gt;

    <summary type="html">&lt;div&gt;It worked! I made the Coffee and Cream chiffon cake in good ol' Betty Crocker, and just used Bob's Red Mill GlutenFree Baking Flour instead.  My theory was that all the loftiness comes from the eggs whites and all their protein, so that lack of gluten shouldn't matter.  And it didn't.  I assume angel cakes will work just as well.

&lt;br/&gt;Also, her carrot cake worked fine, too.  The theory there was that all the carrots would keep the cake from being too dry.  It didn't seem to rise as much as traditional carrot cake, but it tasted just fine.&lt;/div&gt;

&lt;br/&gt;The cake came out a little chewy around the edges.  He thinks maybe letting the batter sit for a bit before baking so the rice flour can suck up more liquid might help.  But really, a little chewy didn't stop me from gobbling my piece up!  I'm trying to hold back from eating the whole thing.  &lt;/div&gt;

&lt;br/&gt;It's kinda fizzy and ambery and actually pretty good. But I like beer and it makes me sad that there are so many I love that I can't have.

    <summary type="html">&lt;div&gt;I meant to buy a pair of shoes, but instead came home with a copy of Simple Treats: A Wheat-Free Dairy-Free Guide to Scrumptious Baked Goods.  I'd never heard of it, but figured it was worth a try.  Apparently one of the authors is a Seattle local, according to the nice lady at Sidecar Vegan Grocery.  (Just a note, this book is NOT gluten free.  I don't see any spelt, kamut, or rye on a quick look at the pantry stocking list, but I do see barley flour and oats.)

&lt;br/&gt;Any other wheat-free cookbook favorites out there?  (I'm especially interested in vegan ones, but I won't limit the rest of you!)  &lt;/div&gt;

    <summary type="html">&lt;div&gt;It has been my wish, since I was exposed to veganism and natural foods, to bring this to the people who usually never get a chance to hear the word, nor get access to, healing, non-toxic diets and foods.
&lt;br/&gt;
&lt;br/&gt;For me, bringing this way of life, and this focus on integrative health, to the underclass in California, particularly kids in the ghettos and people in the penal system has become a driving idea in my heart and mind, as I feel that it is a test of the true power and commitment of not only the vegan movement, but also the activist movement of the left.
&lt;br/&gt;I consider it a challenge that we try make this work on a street level,  and expose lower class kids and adults to this way of thinking.
&lt;br/&gt;
&lt;br/&gt;I have recently decided to embark on a free-form study of the California state penal system, diet, and the vendors chosen to serve "food" to 
&lt;br/&gt;the prisoners in the california state penal system.
&lt;br/&gt;
&lt;br/&gt;Recently, Melanoma, and other forms of cancer are appearing in inmates who had no record of these diseases before entering the prison population.
&lt;br/&gt;
&lt;br/&gt;Also I am compiling information in the process of becoming a vendor (a requirement for bring food into the prison system) and other ways to improve diet among inmates.
&lt;br/&gt;This information, I intend to package, speak on, and get funding for solutions. My forte is public speaking, however my ability to crunch numbers and data is seriously in question. 
&lt;br/&gt;
&lt;br/&gt;Anyone having ideas, information, reports, or wishing to join me in uncovering one of California's worst corruption and mistreatment scandals are invited to email, or message me. I will not be the head or leader of anything. If any change is to take effect in San Quentin, it will require a whole lot more than me.&lt;/div&gt;

&lt;br/&gt;they are in  a plastic package with water.
&lt;br/&gt;there was also yam cake, which looked similar to tofu

&lt;br/&gt;i was a little scared, but also intrigued

&lt;br/&gt;i guess i just like baked yams so much that the idea of a processed noodle was a little frightening&lt;/div&gt;

    <title>Newbie to Wheat-Free</title>

    <summary type="html">&lt;div&gt;I'm new to tribe and to living wheat-free.  This is actually day one!  
&lt;br/&gt;
&lt;br/&gt;I'm going wheat free (and sugar free) mainly because I'm diabetic and wheat really raises my blood sugar.  More so than anything else, other than simple sugars.
&lt;br/&gt;
&lt;br/&gt;I also have noticed that after I eat a large amount of wheat products, I feel lightheaded, cloudy-headed, forgetful, very tired, headache, sinus allergies, very sleepy and depressed.  I don't sleep well and the next morning I have a terrible "food hangover" with nausea, dizziness...basically all the classic alcohol hangover symptoms.
&lt;br/&gt;
&lt;br/&gt;Does anyone else shows these symptoms?  I also feel as though I'm addicted, even though it makes me feel bad.  I tell my husband that wheat and sugar are MY herion.
&lt;br/&gt;
&lt;br/&gt;Anyone else feel like this?  Or am I completely crazy?&lt;/div&gt;

    <title>Wheat Free on the Road</title>

    <summary type="html">&lt;div&gt;I've been traveling a lot lately and finding it challenging to eat healthy and wheat free the minute I get out of my hometown.
&lt;br/&gt;
&lt;br/&gt;Few things I've been doing that have helped a ton that I thought I'd share since I'm sitting here in a motel in Wilmington, NC and feeling hungry but not motivated enough to do anything about it just yet...
&lt;br/&gt;
&lt;br/&gt;* If you can, travel with a cooler. I'm roadtripping this time and brought a cooler with me to keep in the back of the car, it isn't very big but has saved me. I've been able to keep fruit and veggies and hummus and other healthy snacks on hand for those long hours in the car when the only thing to eat for miles is fast food. Also helpful in smaller towns where I know options are limited. 
&lt;br/&gt;
&lt;br/&gt;* Do your homework before you hit a new city. Find out if they have any local health food stores - Whole Foods has a website with a store location thing on it. So does Wild Oats. I actually printed up directions to a few so that when I hit a town that has one I can go there and get some groceries and supplies (to then keep in the cooler). So far, it's been working like a charm.
&lt;br/&gt;
&lt;br/&gt;* Tourism boards usually have restaurant info about their city too - I've done a few searches to see if there are any groovy sounding places to eat since I'm not able to cook my own food as often and rely on eating out. Depending where you are, you might get lucky and find a little gem - you never know.
&lt;br/&gt;
&lt;br/&gt;I don't know why I never thought of doing this stuff before but it's made all the difference in the world on this trip. I've been on the road a week  so far and have another 5 days to go and am feeling pretty good.
&lt;br/&gt;
&lt;br/&gt;Granted, I'm not as strict as some - I eat a little dairy and nuts and some meat. It's the wheat that gets me and I shy away from too much soy too.
&lt;br/&gt;
&lt;br/&gt;My fave travel foods this trip:
&lt;br/&gt;* trail mix and wheat free granola bars - protein and easy pick me up
&lt;br/&gt;* cucumber and baby carrots with hummus and rye crisps and some cheese too
&lt;br/&gt;* peanut butter on rye crisps
&lt;br/&gt;* cereal - yes, really. got a small box of wheat free stuff and those little individual soy milk boxes (yay cooler)
&lt;br/&gt;* salad - I packed a big box up at whole foods salad bar and kept it in the cooler so I'd have something yummy in the middle of nowhere
&lt;br/&gt;* smoked salmon for a protein pick me up - tofu would be good too but I try to avoid too much soy
&lt;br/&gt;* apples, grapefruits and bananas 
&lt;br/&gt;
&lt;br/&gt;Alright... I might actually be hungry enough to do something about it now.&lt;/div&gt;

&lt;br/&gt;My local store is now carrying brown rice, wheat-free spaghetti and penne.  
&lt;br/&gt;
&lt;br/&gt;I have also long been a fan of the Zen Bakery muffins, one flavor of which come in a wheat-free version (I believe all are vegan).  And for a quick lunch when I'm lazy, the black bean enchiladas are awesome (yeah, they require a microwave).

    <summary type="html">&lt;div&gt;I found out yesterday that I am allergic to wheat. So I did a search here on good ol' Tribe and found this tribe.
&lt;br/&gt;
&lt;br/&gt;After getting over the initial "what am I going to eat? Everything has wheat in it!". I did some research online and calmed down. I am glad to have finally found out the reason I have felt so bad for so many years and now I can do something about it.
&lt;br/&gt;
&lt;br/&gt;Anyway...I have to make another appointment to do a followup with my doctor to get all the do's and don't's he recommends but in the meantime I wanted to say Hi.

&lt;br/&gt;
&lt;br/&gt;About five years ago I was food allergy tested.  The results were amazing.  Since that time, I've noticed that if I ate anything that was on the list that I was "allergic" to, I had some significant reactions.
&lt;br/&gt;
&lt;br/&gt;Recently, I moved to another state and I found a new doctor.  He wants me to have a blood test for Celiac Disease.  
&lt;br/&gt;
&lt;br/&gt;This is a really silly question, but since I'm allergic to the following grasses, wheat, rye, barley, and oats (and yeast, hops, etc), I've experimented with wheat free baked goods.  My reaction was so severe with these that I honestly don't think I have Celiac Disease.
&lt;br/&gt;
&lt;br/&gt;I don't want to into details about my reaction (unless anyone wants more info), but I couldn't be away from the bathroom for any amount of time.  And this would last for over a 24 hour period.  I've tried "The Gluten Free Pantry" and "Energy" brand alternatives with horrible results.
&lt;br/&gt;
&lt;br/&gt;Does anyone with Celiac Disease have such a reaction to gluten free products?  In my case, I'm better off cheating with the grasses that I've been "allergic" to than with the gluten free alternatives.

    <summary type="html">&lt;div&gt;"MINNEAPOLIS (AP) - Federal authorities seized more than 30,000 loaves of bread from the French Meadow Bakery and a storehouse on Tuesday, accusing the company of mislabeling the products as wheat-free.
&lt;br/&gt;
&lt;br/&gt;The products contain the grain spelt, which U.S. Attorney Thomas Heffelfinger said shares common proteins with wheat and is just as dangerous to those allergic to wheat.
&lt;br/&gt;
&lt;br/&gt;The bakery said it considers spelt to be an alternative to wheat.
&lt;br/&gt;
&lt;br/&gt;Wheat allergies are among the most common of food allergies and can be life-threatening, especially to children, according to the U.S. Food and Drug Administration.

&lt;br/&gt;"Mislabeling actually creates a serious health risk in a significant percentage of the population," Heffelfinger said.

    <summary type="html">&lt;div&gt;Hi, I am Nerissa (aka Mamma).  I am mamma to 4 kids, a hubby and two adopted kids (my husband's band mates...lol).  I am currently struggling with finding things that my 5 year old can eat.

&lt;br/&gt;He is allergic to wheat, oats and gluten...in addition he has signs the diabetes is coming and we want to prolong that (or stop it from happening)....so sugar is also a concern.  I find it very difficult (and expensive) to feed him things he likes and that keep him feeling full.  I swear he NEVER stops eating.

&lt;br/&gt;Anyway, I found this tribe and I hope it will help me in my struggles!

    <title>Eating out at fairs and festivals: What do you do?</title>

    <summary type="html">&lt;div&gt;What do you do about all day events/festivals/places in general that won't let you bring in food because they want you to buy theirs?  I'm brand new to a wheat free/gluten free diet.  I've had enough of a hassel over the years eating dairy-free (my favorite is when they ask "what's dairy?").  From my one attempt eating gluten-free on campus, I have an awful time trying to explain what gluten could be hiding in (I've given up--bringing all my own food now).  
&lt;br/&gt;
&lt;br/&gt;I'm heading to an all-day festival this weekend.  I'm thinking of the usual fair-food and can't think of anything to eat--I already don't do many meats and fried foods, no dairy, then add in no bread products...all that's left is salad, if that even exists at fairs nowadays, but I doubt I'll be able to check out the ingredients in the dressing... I'm still continuing food allergy testing, so I want to make sure nothing at all is sneaking in, not even the grain alcohol in cooking spray.  I thought I'd just bring my own lunch, but don't know what will happen if they won't let me bring it in.  Anyone tried it?  I'm imagining arguing with some minimum wage guard about celiacs and my logic--either let me bring my food in, or all four of us will have to leave and eat somewhere else--and can't imagine that going well either.  I've e-mail the festival and asked for written confirmation that I can bring in my own food, but haven't heard back.

&lt;br/&gt;"Jerusalem artichoke flour is also recommended for those who are allergic to wheat and other grains."
&lt;br/&gt;among a lot of other stuff- so i thought i would share, considering wheat and gluten free individuals need more variety usually, especially when starting aout, and sometimes people end up wheat free due to other medical issues that the wheat was "sticking up" if you will-
&lt;br/&gt;
&lt;br/&gt;so- here's some stuff-
&lt;br/&gt;
&lt;br/&gt;"Jerusalem artichoke history
&lt;br/&gt;Jerusalem artichoke, botanically-named Helianthus tuberosus, is the tuber of a variety of perennial flower in the aster family. The flowers look like small yellow sunflowers. Also marketed as sunchokes, these gnarly little tubers look a lot like ginger root. Perhaps the most important root cash crop to originate in North America, the tubers have a potato-like texture often recommended as a potato substitute for diabetics. Sir Walter Raleigh found Native Americans cultivating sunroots in what is now Virginia in 1585. When the sunchoke reached Europe in the early 1600s thanks to Samuel de Champlain, it was known as the "Canada" or "French" potato. The French, who call it topinambour (incidentally also a term used for an uncouth, uneducated person), are credited with improving the tubers and cultivating sunchokes on a larger scale."
&lt;br/&gt;
&lt;br/&gt;"For many years, the Jerusalem artichoke was shunned due to an old wives' tale linking it to leprosy simply because of the similarity of the tubers to the shape of deformed fingers caused by the disease. During World War II, sunchokes and rutabagas were the most prevalent vegetables, giving them the reputation as a poor man's vegetable."

&lt;br/&gt;Sunchokes store their carbohydrates in a form of inulin, a starch that is not utilized by the body for energy, as opposed to sugar. They are recommended as a potato substitute for diabetics since they are filling but not absorbed by the body, and because they also show indications of assisting in blood sugar control. Jerusalem artichoke flour is also recommended for those who are allergic to wheat and other grains.

&lt;br/&gt;High in iron, potassium and thiamine, low-fat sunchokes also feed the healthy bacteria (lactobacilli) in the intestional tract. However, they can cause flatulence in some people and first tastings should be in small amounts. For those sensitive to gas-producing foods, pre-cooking before baking or a good boiling is recommended, and eating them raw should be avoided. On another note, one strange case of an allergic reaction has been linked to inulin, which may be a subject of interest to those who suffer swelling and breathing difficulties from other foods. "

&lt;br/&gt;foods, especially nuts, are over 50% fat and
&lt;br/&gt;require hours for digestion.
&lt;br/&gt;
&lt;br/&gt;6. Eat proteins and sugars (fruits) at separate
&lt;br/&gt;meals.
&lt;br/&gt;
&lt;br/&gt;7. Eat starchy foods and sugars (fruits) at
&lt;br/&gt;separate meals. Fruits undergo no digestion in the
&lt;br/&gt;stomach and are held up if eaten with foods which
&lt;br/&gt;require digestion in the stomach.

&lt;br/&gt;8. Eat melons alone. Melons combine with almost no
&lt;br/&gt;other food.
&lt;br/&gt;
&lt;br/&gt;9. Forget the desserts. Eaten on top of meals they
&lt;br/&gt;lie heavy on the stomach, requiring no digestion
&lt;br/&gt;there, and ferment. Bacteria turn them into

In the 20th century, spelt was virtually replaced by wheat, which produces higher yields. However, since spelt is rather more hardy than wheat and does not require fertilizers, the organic farming movement made it more popular again towards the end of the century.

&lt;br/&gt;Spelt contains about 62 percent carbohydrates, 8.8 percent fibre, 12 percent protein and 2.7 percent fat, as well as dietary minerals and vitamins, including silica. As it contains a high amount of gluten, it is suitable for baking. However, the gluten in spelt is different from that in normal wheat and therefore spelt can be consumed by some gluten-intolerant people.

    <summary type="html">&lt;div&gt;well, so much for at least trying to stay low-wheat if not no-wheat on vacation!  i'm in ny and of course my first breakfast was bagels.  and last night i had a hot dog!  a hot dog!  (well, a turkey dog.)  had to eat the bun - i was ravenous, and there was no other food around (it was late at the water taxi beach - just hot dogs and beer.) sigh.  oh well - at least i don't have a serious allergy - the eczema may just act up, and i've been a bit "out of it" (though that could be jet lag.)

    <summary type="html">&lt;div&gt;ok....another week lost due to the wheat of doom......made me kinda worry about my october visit to san diego.  the reason i got sick last time was i didn't want to be a total pain in the ass for the friend i was staying with and ate lots of bagels as it seemed a reaosnable vegan alternative.....this year my reactions to gluten have gone off the chart and this is not going to be an option....

&lt;br/&gt;so, is there anyone on here who lives in, near or knows of good places to get gluten free food in san diego area?  i am learning to accept fruit n veg as my staples but i am a carb junkie at heart and a whole month of no gluten free cereal or anthing is just unpleasant.

&lt;br/&gt;any info or thoughts welcome.  it's going to make me a great house guest!  come with warning...may sleep 20 hours a day and not be ablt to speak....haha

    <title>Serious Allergies</title>

&lt;br/&gt;
&lt;br/&gt;Sorry to give a lot of details...but here we go...
&lt;br/&gt;
&lt;br/&gt;So, for the last year, I have been plagued with severe constipation, bloating and and few other terrible, uncomfortable things.  After way too many blood tests and "other" procedures, we ruled out cancer, IBS, etc.  My doc has now said it must be food allergies, pointing to wheat/gluten, (some) nuts and sugar.  I did a 7 daycleanse, felt great, and things seem to be working a little better, now that I'm eating totally differently.  So I'm am now on a fruit and veggie *only* diet, and reintroducing EVERYTHING back into my system.  This is so difficult!  I have the Raw book and a few others, but does anyone have advice on how to keep going?  Recipes?  And how to get protein?  I seem to have issues with peanuts, almonds and pecans.  Thanks everyone...&lt;/div&gt;

&lt;br/&gt;An allergy test a few years ago confirmed my suspicion that I have a wheat sensitivity.  (I was surprised to find out Rye was also a problem. On a previous test over 20 years ago, I was told that I'm allergic to potatoes.)
&lt;br/&gt;
&lt;br/&gt;Anyway, how do I know if it's all wheat, wheat gluten etc or just some wheats?  What about Bulgar?
&lt;br/&gt;According to http://en.wikipedia.org/wiki/Wheat  there's 6 species
&lt;br/&gt;
&lt;br/&gt;    * Common Wheat or Bread wheat - (T. aestivum) A hexaploid species that is the most widely cultivated in the world.
&lt;br/&gt;    * Durum - (T. durum) The only tetraploid form of wheat widely used today, and the second most widely cultivated wheat today.
&lt;br/&gt;    * Einkorn - (T. monococcum) A diploid species with wild and cultivated variants. One of the earliest cultivated, but rarely planted today.

&lt;br/&gt;room for a newbie with a possibly dumb question????  well ya stuck with me anyways.  haha
&lt;br/&gt;
&lt;br/&gt;ok, i turned vegan about three years ago and noticed that when i gave up wheat as well as part of some random detox thing i felt really good.  like i had not noticed how bad i was normally feeling till then.  anyways i avoided the wheat and all was good till i went on vacation last year.  i had a great time in san diego but i lapsed into old bagel and bread habbits as i was enough of a pain for my friend to find food for with the vegan thing going....and i figured how bad could it be?  well by the time i had done diego and a stint in virginia i was pretty sick.  the worst case of sinisitus i had ever had, i was barely awake most of the last week, apathetic, worn out, swollen glands, looked kinda like the elephant woman a bit and was sounding like darth vader.  i had been doing high impact cardio all summer and now i could barely walk a few feet without stopping to catch my breath.  
&lt;br/&gt;so i got home, ditched the wheat as best as i could and felt a ton better.  but i can't seem to get right again.  i have finally relented and gone to the doctors as there is more than one thing going mental with my body at present.  but i have an inbuilt mentality saying don't mention possible wheat intollerabce you'll be wasting their time.  and then i seem to hone in on food with wheat in it (cocoa?!) and feel dreadful after the tiniest amount.  my breathing freaks me out most as i am claustropobic and feel paniced when my breathing is impaired.  i guess i am just wanting someone to tell me this is not just in my head.  i am sick of hearing "just eat it ad enjoy it and don't worry".  it's making me loose all faith in my own judgement.  i know dairy/yeast/eggs/aspartame and tea give me bad headaches.  i have taken up body building in an effort to not feel like such a pathetic lump so need more protein than normal and the wheat issue is just one thing on a long list that is really starting to get me down now.  
&lt;br/&gt;wow i really did not plan on this being so long or whiney.  sorry!  guess it is bothering me more than i thought.  
&lt;br/&gt;
&lt;br/&gt;so do i ask and see if i can get a test done or am i just jumping at shadows after so many months of looking at the same problems and getting nowhere?
&lt;br/&gt;
&lt;br/&gt;any advice i would really welcome.  
&lt;br/&gt;
&lt;br/&gt;thank you for your time, it means a lot and i know this is a bit long winded....oopps.....never could just get to a point without doing a few laps of the track first!

&lt;br/&gt;as you all know.. even more food restrictions is extra tricky for us...

&lt;br/&gt;rice pasta is kinda chewy and my regular salads and stir frys are even lengthy to chew...

&lt;br/&gt;i didn't change anything in my diet 
&lt;br/&gt;except i started taking
&lt;br/&gt;CAL-CITRATE+
&lt;br/&gt;IT'S 1000 MG OF CALCIUM
&lt;br/&gt;W/ VIT.D-3 and Magnesium
&lt;br/&gt;
&lt;br/&gt;the serving size is 4 tablets
&lt;br/&gt;i havn't gotten up to that much cause i don't like to take a bunch of pills at once- so i take it a couple times a day instead of all at once-
&lt;br/&gt;so even with the lower dosage
&lt;br/&gt;the mini tremors have stopped, pretty much all together
&lt;br/&gt;
&lt;br/&gt;just thought i'd share

    <summary type="html">&lt;div&gt;This might be totally unrelated because I belly dance, and occasionally go to the gym so maybe I'm just not stretching enough..Anywho. There for a while I was getting horrid muscle cramps in my feet, lower legs and occasionally neck. How do you pull a muscle getting off the couch? I read somewhere that muscle pain might also be a wheat thing. Dangitall I almost wish I was twice as symptomatic so it would be easier to determine if I do have a problem instead of wondering if it's all in my head.&lt;/div&gt;

    <summary type="html">&lt;div&gt;I was reading the ealier post about pancakes and thought I'd share my favorite pre-made mix company.  Namaste I found this stuff at a Albertsons in Sebastopol.  They have a pizza mix, pancake mix and cookie mix.. 
&lt;br/&gt;they are gluten, wheat,potatoe, soy, dairy and casein free!!!!!&lt;/div&gt;

"Yesterday, I tried to get out of bed and just couldn't. It hurt so much I had to sit back down. That's when I ended up here." The patient, a slender, soft-spoken woman who appeared younger than her 52 years, had dark circles under her tired eyes. Despite her offhand manner, Dr. Jennifer Quinn, a resident in her last year of training, thought the patient's pale complexion and exhausted appearance suggested a longstanding illness.
&lt;br/&gt;
&lt;br/&gt;Her legs had been hurting for quite a while, she told Quinn and the rest of the team, for weeks, maybe even a year. At first, it had been occasional sharp pains that shot from her knees to her ankles, especially when she walked. Lately it was more like an ache — as if she had pulled a muscle, but all over her legs. And she was tired, very tired.
&lt;br/&gt;
&lt;br/&gt;She had been healthy most of her life, she reported. She had a little arthritis, mostly in the knees, and a recent ear infection. She took no medicines, did not drink and smoked about half a pack a day. She lived with her husband and adult son and raised llamas that she hoped one day to turn into a fiber business, though at this point they were more pets than industry.
&lt;br/&gt;
&lt;br/&gt;The physical exam was unremarkable until the resident pulled down the sheets to look at the patient's legs. They were swollen and blotched with bruises at all different stages. The skin was dotted with red spots, as well as with many tiny inflamed-looking marks. The doctor applied pressure to the skin over the shin with one finger. The swollen tissue immediately gave way, leaving a deep imprint of the finger in the smooth contour of the leg. The patient drew in a breath, and the doctor saw that her eyes were bright with tears. "I'm sorry," she said. "I won't touch them again."
&lt;br/&gt;
&lt;br/&gt;Outside the room, the medical team reviewed the test results from the emergency room, where the patient was sent the night before. She was slightly anemic (not unusual for a premenopausal woman) and a little dehydrated, but otherwise the routine testing was normal. The E.R. doctors had been concerned that she had a clot somewhere that was preventing the blood in her legs from returning to the heart. She had had a CT of her chest, abdomen and pelvis and an ultrasound of her legs, but no obstruction was found.
&lt;br/&gt;
&lt;br/&gt;2. Investigation
&lt;br/&gt;
&lt;br/&gt;Quinn identified the strange spotted rash as palpable purpura — a skin eruption caused by the destruction of the tiny capillaries in the legs — and she considered the diseases that could cause it.
