Short intro: I've been wheat-free since January and feel fan-freakin'-tastic! I've been looking for a place where not everyone is a celiac and avoiding all gluten... no offense to any celiacs here, it's just that if you even say spelt to a celiac they turn and run away.:) I'm also lactose intolerant (big surprise!) I have never been to a doctor about this wheat thing, but I did a ton of research, spoke to a nutrition expert and went on an elimination diet before jumping ahead.
I can have oats, barley, rye and spelt with no problem.
I've "wheated" myself since starting, mostly in the beginning by accident.... sometimes on purpose (only 3 times!) and totally willing to pay the consequences (fried dough!!, Pizza Hut, take-out Chinese chicken fingers)
I have found that Yogi Detox Tea helps with alot of my symptoms if I accidentally ingest wheat. Symptoms: Extreme fatigue, neck & shoulder pain, brain fog, burping, gas, bloating, stomach pain, nausea, fever, post nasal drip, moodiness, shortness of breath, "it's like the flu" I tell people. Or a hangover. Anyone else feel like someone slipped them some opiates after they eat wheat? Only it's not good. Weird I know.
I was reading through some posts here and often chuckled, "you're safe, there's only flour in that, not wheat" Man! have I heard that a thousand times! Ever meet the people who think eggs are dairy? Or that you can eat white bread....
And yes, I miss bagels. Glutino makes a nice bagel though.

Wed, June 6, 2007 - 8:11 PMActually, there's a legitimate reason for that. They're kept in the dairy case at the grocery store. I've mostly heard eggs referred to as dairy in commercial food circles (which I don't run in, but have run into just enough to have had it explained to me).

cept i RUN from spelt, ha ha, and i am not celiac
and i have recently come to the conclusion that not only am i lactose intollerant to the upteenth degree i am also allergic to casein.
i havn't tried the detox tea when i slip, great idea! i would love to know if that still works for you a year from now.
the white bread thing gets me every time, people don't like to think that they are eating bleached stuff
