Wheat Free Pancakes

Posted for Bethani, but thought I'd make it's own message.

3 eggs, mixed
1 ripe banana mashed
1/2 cup walnuts, grind until fine

Mix together and make like normal pancakes. You may find you need to add less or more walnuts. Sometimes the pancakes don't turn out and I find I needed to add more.

My son, who doesn't like pancakes or eggs, loves these pancakes.

    Thanks sooo much!! Any recipes or secrets you have like this are appreciated as I try to adjust to the fact that just about everything I cook has wheat in it! Thanks again,

    I wonder, can these be made with other nuts, such as almonds or cashews? The recipe sounds great, but I'm allergic to walnuts. Have you ever tried using other nut flours?

    Haven't been able to tolerate walnuts for several years now. I can eat cooked bananas, but not raw ones.. and I'm allergic to latex, too. Read some research a couple years ago that suggested that walnuts, bananas, and latex all share common features that provoke allergic responses in susceptible people. I'd guess that those of us who've lived 40+ years before diagnosis would be in a risk group = susceptible, as all of us were repeatedly exposed to abnormal amounts of undigested foreign proteins via damaged gut and then our bloodstreams. That would set up an antibody response..

      Wow - that's intriguing!

      I can't tolerate walnuts - I get canker sores inside my mouth. My sister has the same reaction.

      I can only eat really ripe bananas, or cooked bananas. If a banana is not turning spotty brown on the peel, it will make my stomach upset.

      I've had reactions to latex in the past (esp. condoms) but haven't noticed it lately.

        Just to play devil's advocate... I loathe walnuts, and they make the back of my throat tickle. But I eat bananas like it's going out of style and I'm in and out of latex gloves all day at work. I think developing a banana allergy would be even worse than the wheat thing!

          Yeah, I don't mind having a walnut allergy, but I would be really sad to lose bananas.

          Have you tried other types of flours like tef, amaranth, rice, or something??
          I got rice flour at TJ's, but saw it in the Indian market for much less. Haven't tried it yet.

          Ohh, and if you want a savory pancake, try chick pea pancakes. They're a Medeterranean street food.. you can add fillings, or just eat it sliced out of the pan, and it's so yummy. Feels like junk food!



          Actually, here's an Indian version... I will try to dig up the Med version later:

          Chickpea Flour Pancakes

          These are delicious to eat with chutney and raita. I depend on these when I'm too hungry to spend a lot of time to cook. Super-fast, super-easy. Chickpea flour is available in Indian grocery stores; it is also called besan flour.

          1. Sift some chickpea flour into a bowl.
          2. Add enough water to make a pancake consistency batter.
          3. Add salt and spices (amchoor, ground coriander, ground cumin, cayenne, garlic powder, etc.)
          4. Whisk or beat the lumps out.
          5. Stir in any of the following (or not):
          * Chopped tomatoes
          * Chopped onions
          * Chopped green onions
          * Chopped cilantros
          6. Stir to mix.
          7. Coat a nonstick pan with spray-oil or grease lightly.
          8. Heat the pan over medium to medium high heat
          9. Scoops out 1/3 cup of batter using a measuring cup and pour into the pan.
          10. Cook the pancake until the bottom is slightly brown and flip.
          11. Using additional oil, as necessary, cook the second side the same way.
          12. Keep warm in the oven until they're all done.
          13. Serve with chutney, pickle, or raita.

                    Hi everyone, new to tribe.
                    Pamelas Ultimate Baking & Pancake Mix is wheat-free & gluten-free. You can find it in any organic alternative shop. Makes great pancakes, waffles, cookies, crepes, scones, pie crust. I've been using it for quite some time, and the pancakes come out light, fluffy, and delicious. I use 'Shady Maple Farms' organic pure maple syrup. Try it out, without a lot of fuss.

                      Thanks for the recommendation. I miss pancakes, too. I think I ordered the Pamela's mix in my last online order-which should be arriving within a day or two.

    I've been messing with the pancake (basic batter mixture) recipe in The Vegan Cookbook for a while now. I think we finally got it right this morning, and totally by accident because I forgot to buy soy flour.

    1 c barley flour (recipe calls for whole wheat)
    3/4 c buckwheat flour (recipe calls for soy)
    2 tsp baking powder
    3/4 c rice milk (recipe calls for 1/2 c soy milk; I usually use almond, but was out today)
    3/4 c water (add more if the batter is too thin - recipe calls for 1/2 c)
    3 tbs oil

    To go totally gluten free, I guess you could try all buckwheat, or a combo of buckwheat and soy.
