hi. i am new here. and new to this way of eating. its been a month.
intro+questions follow;
i had some kidney issues as well as allergies and general un-well-being, and these are the diet mod's i've done to achieve better health for myself. i try to stay away from most grains, occasional rice and quinoa are all i've been eating in that department. also, because of having multiple kidney stones at a young age and other kidney related problems (paiiinnfulll) i've cut out (some things i love) most nuts, spinach, tomatoes, mushrooms, strawberries. i don't any animal products, besides occasional fish and eggs. i'm meant to have a low protein diet, so its not a big issue there.
so, a normal american diet is out of the question now!
i'm not about to give it up. i feel amazing. my entire life i'd had shortness of breath from asthma, and i am breathing far deeper than i ever knew was possible. my body looks and feels better than ever before.
anyway... i do feel a bit limited. after a month, i've eaten a huge variety of vegetables, some thai food and indian foo, sushi. what i'm really missing is desserts...
i'm wondering about wheat-free, dairy-free, sugar-free dessert items and also wondering if any other people here follow diets similar to mine. also wondering if you all know of tribes with these restrictions. its hard to find recipes and things that make all these considerations.

i know i've read that of alternative sweeteners (honey, brown rice syrup, succanat, etc) maple syrup is the only one that doesnt cause an insulin spike. so i guess that's the best bet.
i have avoided everything but naturally occuring sugar in fruit, and i'd like to mostly keep it that way, and sweeten things using dates or other fruits, but i'm not totally opposed to other natural sweetening.

but i am not fruit free- this is an important distiction.
the seserts i love that are very close to what you speak of do have nuts and fruit sugars
