I'm jenn. I am on a new adventure in eating and am excited that y'all are here. I am doing some harm-reduction lifestyle changes (a little at a time) and think it might be time to lower and eventually phase out the wheat in my world for some rather persnickety health reasons. I have been quite lucky to find the wheat-free/gluten-free tribes. I have some other introductory posts up and around these here parts (but wanted them all to be different, so no cut and paste) and would love to ask here as well.
I have three beautiful overripe bananas teasing me from the kitchen and I really want to make banana bread. I am not able to go to the store (fatigue problem at the moment) and have a few flours on hand. I do not have celiacs, so gluten is still OK (though i'm looking to phase that as well...but all in due time). I have oat, brown rice and spelt fours as well as some almonds around I can grind up. The challenge? Any recipes or ideas out there using the flours i've got? I could experiment, but would hate for a kitchen disaster today. If there are vegan recipes out there too, I'd love to hear your wonderful creations!

I used to use all barley flour. Lately I do half barley and half almond meal. I'm sure you could do spelt (which many wheat free folks can't do, but some can) and almond. I haven't used oat flour, and I generally find rice flour alone to be too grainy.
I use 1/2 cup of raw sugar in this recipe. I found 3/4 to be too sweet.
I make it into muffins and bake I think 17 minutes for a dozen or 23 for 8.
